Under the leadership of the new Chief Chef, Eoghan O’Flynn, a radical change has been introduced to the tasting menus at The Cove restaurant. O’Flynn, renowned for his fondness for local ingredients, has commenced his tenure by integrating two original menus that highlight seasonal produce. O’Flynn, a young, goal-oriented, and dynamic chef has gained extensive experience from a number of culinary positions both locally in Ireland and internationally, from relaxed bar and grill eateries to Michelin-star establishments.
All menus at The Cove, located within Fota Island Resort, are a celebration of the region’s produce. Exploiting the abundant pantry this location provides, the menus reflect the idyllic setting and the local pride associated with this area. The Cove, with its subtle luxury, elegance, dedicated wine cellar and specially selected wine pairings by in-house sommeliers enhance the culinary experience by complementing the ingredients used in the meals. The food served is a fine blend of local flavours, intricately prepared techniques and a personal connection.
O’Flynn’s updated menus embody this essence, underscoring the skills and dedication of local producers in Cork and the surrounding areas. For those wishing to indulge in these unique tasting menus, The Cove opens its doors from Thursday to Saturday, 6.30pm – 9pm. Reservations can be made through the Fota Island Resort’s website or by calling +21 488 3700.
