Whip up a mouthwatering meal of zesty lamb stir fry, complemented with cous cous, olives and a touch of mint

For a delicious dinner for two, this delicious cous cous recipe is the perfect solution. Expect about a quarter of an hour of cooking time and just five minutes of preparation.

Here are the ingredients you’ll need:

– 150g of cous cous
– Roughly seven to eight saffron threads
– 230ml of boiling water
– A single cube of chicken bouillon
– A tablespoon of vegetable oil
– 400g of minced lamb
– One small diced onion
– Two cloves of garlic, also diced
– A small red chilli, sliced
– One tablespoon of ground cumin
– One tablespoon of ground coriander
– One red onion, sliced thin
– Half a thinly sliced cucumber
– A couple tablespoons of black olives
– 50g of crumbled feta cheese
– Fresh coriander leaves
– Fresh mint leaves

Here’s how to prepare the dish:

First, add the cous cous to a bowl that’s safe for hot temperatures, then scatter in the saffron. Next, dissolve the chicken bouillon cube in the boiling water. Pour this over the cous cous, cover with cling film and leave it for five minutes. When the cous cous is cooked and has doubled in size, separate the grains with a fork and then set it aside.

Warm up a large non-stick frying pan and drizzle in the oil. Put in the lamb mince and sear on medium to high heat until it’s well browned everywhere, which should take around five minutes. Mix in the diced onion, garlic, chilli, cumin and coriander. Stir and cook for another five minutes. Spice up with salt and pepper.

To serve the dish, distribute the prepared cous cous and lamb mince into bowls, and add the thin slices of red onion and cucumber. Top it with olives and crumbled feta cheese. For the finishing touch, add fresh coriander and mint leaves.
