“Salad of Chickpeas infused with Spices, Feta Cheese, Orange, and Thyme”

Ingredients
– Almonds, flaked, 2 tablespoons
– Chickpeas, canned, 2 tins
– 1 orange (store the juice and zest separately)
– Fajita spice blend, 1 tablespoon
– Dijon mustard, 1 tablespoon
– Sprinkle of sea salt and black pepper
– Fresh thyme leaves, 2 teaspoons
– Spring onions, 2, sliced
– Feta cheese, 80 grams, crumbled
– A bunch of fresh mint leaves
– Begin by preheating your oven to 180 degrees Celsius. Plonk the flaked almonds on a small, oven-safe tray and bake for about 7-8 minutes until they turn a shade of golden brown, then set aside to cool.
– Give the chickpeas a good wash under cold water and drain thoroughly, then transfer to a large mixing bowl. In another small bowl, prepare your dressing by squeezing in the juice of an orange, adding the mentioned spices, mustard, salt, pepper and thyme leaves, and mix it all well with a spoon.
– Coat the chickpeas with the prepared dressing, ensuring uniformity. Now add in the sliced spring onions and stir.
– Transfer the seasoned chickpeas to a serving dish and garnish it with the crumbled feta, the orange zest and the toasted almonds you’ve set aside earlier. Finally, crown it with the fresh mint leaves.
