For a meal designed for two, the key ingredients include:
– 2 substantial chicken breasts
– 2 sizable sage leaves
– 2 slice prosciutto (preferably di Parma)
– 1 tablespoon of normal flour
– 2 tablespoons vegetable oil
– 2 carrots and 2 parsnips, both peeled and segment into sticks
– 1/2 a celeriac, peeled and segment into sticks
– 80 millilitres of sherry/red wine vinegar
– 3 star anise
– 80 millilitres of maple syrup
– 1 tablespoon vegetable oil
– 1 tablespoon butter
– 50 millilitres of white wine
– 100 millilitres of chicken stock
– Sea salt and black pepper for seasoning
To cook this meal, preheat the oven to a temperature of 200 degrees. The chicken breasts should be seasoned with salt and pepper on a tray or plate. Follow by draping two large sage leaves over each chicken breast. Then, tightly wrap one prosciutto slice around each breast, making sure the sage stays put.
To prepare the vegetables, first toss them in flour. Using an ovenproof frying pan that’s been heated to a moderate level, pour in the oil. The carrots are the first to go in the pan, cooking them until they exhibit signs of browning. The next ingredients to sear are the parsnips, celeriac and star anise which should be stirred until they start to change colour.
Introduce the vinegar until it nearly evaporates, then add the maple syrup, mixing gently until the vegetables become glazed with syrup. Transfer these vegetables to a baking tray and let it roast for 12 to 15 minutes, until they are tender.
At the same time as the vegetables are placed in the oven, reintroduce the pan to the heat, adding oil and butter. Once the butter starts to froth, introduce the chicken breasts that have been wrapped and allow them to fry for two minutes. Turn them once they are browned and let them cook for another two minutes. Follow this by adding the white wine, and once it’s reduced by half, add the chicken stock and let it bubble. Now it’s time to transfer the pan to the oven and allow the ingredients to cook for 7 to 8 more minutes.
