Italian recipes: Potato casserole

Today we have a very simple recipe for you: Potato casserole.
Actually this dish is from Trieste, a beautiful city in the far north of Italy.
Ingredients: 700/800 g sweet potatoes, 1 onion, oil, pancetta, salt and pepper.
Directions: boil the potatoes in slightly salted water, brown the finely chopped onion in a little oil and then add the pancetta.

Next add the mashed potatoes (when you break the potatoes up, please use a fork and not a potato masher ), salt and pepper to taste, spread the mashed potatoes evenly in the cassarole and turn often until crisp and golden.
