Italian recipes: Pizza with radicchio

To make pizza with radicchio you need the following ingredients:500 g flour; yeast; 1 teaspoon sugar or malt; salt; radicchio; smoked scamorza cheese; two tablespoon Parmesan cheese; extra virgin olive oil; salt and pepper.
Preparation: sift the flour and make a well in the centre.
Melt the yeast in a cup of warm water and sugar.

Work the dough until nice and shiny.
Cover with cloth and leave to rest for a couple of hours.
In the meanwhile cut the radicchio into strips and scamorza into cubes.
In a bowl, mix the scamorza cheese and radicchio and add oil, salt and pepper.
Preheat the oven to 200 c, roll out the dough and then top with the radicchio and scamorza mixture.
Bake until golden brown.
