Italian recipes: panissa from Genoa

Today we want to share with you the recipe of one of the most typical Genoese dishes: the famous panissa.
It looks and tastes like polenta and can be seasoned with onions, oil, salt and pepper.
Ingredients: 300 g chickpea flour, 1 litre water, salt.
Directions: bring a pot of salted water to the boil, turn off the heat, pour the flour in a very slow stream and stir gently with a whisk to keep lumps from forming.

When the mush thickens , pour into a bowl and then let it cool.
At this point the dish is ready, but if you want to add extra flavour, cut the panissa into thick strips and fry in hot oil.
