Italian recipes: Lamb’s head with beans

I’m afraid it wont’ be easy for you to find a lamb’s head, tastes are changing and now many people prefer vegetables to meat.
Anyway here’s a very old and tasty recipe that our grandmothers used to prepare in the old days .
After all those were very hard times and housewives had to adjust their family budgets to make ends meet.

Ingredients: 2 lamb’s heads, 400 g Spanish beans, 1 onion, extravergin olive oil , ½ kg tomato sauce, 50 ham (cut into small cubes), salt and pepper.
Method: 1.
Skin and clean the heads, cut them in two and then put them in cold water for an hour.

Simmer the heads in salted water for half an hour.
3.
Boil the beans.
4.
Brown the onion in a little oil, add the ham cubes and then pour the tomato sauce and cook for 15 minutes at a low heat.
5.
Add the heads, beans and cook for 10 minutes more.
