Italian desserts: tuscan ‘cantucci’ biscuits with vin santo

The variety of Italian desserts out there matches the variety of pasta dishes in equal quantities, and today we look at some fantastic Italian biscuits: the “cantucci toscani”.
Ingredients required: 500 grams of white flour, 250 grams of peeled almonds, 200 grams of sugar, 100 grams of butter, three eggs, one teaspoon of baking soda, a pinch of salt and one tablespoon of vin santo or other dessert wine.

Method: mix together the flour sugar, baking soda, softened butter, eggs and salt.
Toast the almonds slightly and add them to the mix.
With the mix, form some long biscuits and bake in the oven at 180 degrees for 25 minutes, turning them occasionally.
Remove from the oven, slice into smaller biscuits and bake again for another five minutes.
Cool and keep them in plastic or glass containers.
These biscuits are great to dip in some home made zabaglione, or for the perfect wine match, nothing can go past a glass of Vin Santo!
