A dearly beloved father of two was commemorated this month in County Cork following his untimely death. Ian Baitson, renowned for his affable disposition which endeared him to many, was sadly taken from life following a vicious assault in a Cobh car park on March 15th. He succumbed to his injuries four days later in hospital. Dylan Scannell (30), a Cobh resident, is presently detained and charged with his murder.
The mourning congregation gathered at St Colman’s Cathedral, the very place where Mr. Baitson was christened 33 years prior during the Easter Vigil. Richard Baitson, Ian’s sibling, shared heartfelt memories of his brother, describing him as an unforgettable character who left an imprint on everyone who crossed paths with him.
“He was an endearing character,” said Mr. Baitson, reminiscing about his cherished brother. “We are forever grateful to the Cork University Hospital staff and everyone who came to our support as we began navigating this heart-wrenching situation”.
Anguish and gratitude were intertwined in Mr. Baitson’s tribute as he thanked everyone for allowing Ian’s loved ones to spend his last four days by his side. He praised the community support, emphasising the importance of looking out for each other as life is short.
The memorial at the Cathedral featured poignant offerings symbolising Ian’s life, including a photo album with pictures of him and his young children, Myles and Zoe, and Ian’s chef hat and recipe book. His passion for running was acknowledged through a marathon training bib.
Fr Tom McDermott noted that many have fondly remembered Ian’s infectious smile and his ‘heart of gold’. The community now struggles to come to terms with the tragic loss of a man whose warmth and kindness touched many hearts.
“He was a true people’s person, engaging in conversation with every person he encountered. His infectious laughter, enchanting humour, and charming smile could light up any gathering, always leaving it more lively. It was often said, during their childhood, he was the one every mother enquired about,” he recounted.
Mr Baitson was sadly preceded in death by his father, Paul. He leaves behind his mother, Helen, his children, Zoe and Myles, as well as a larger circle of family and friends. After a service, his remains were cremated at the Island Crematorium located in Ringaskiddy.
