Clam Pasta Delight

Here’s the recipe you will need to follow to make a delicious linguine dish with clams:

You will need:
– Linguine, dried – 160g
– Olive oil – 4 tablespoons
– Garlic cloves, thinly sliced – 2
– Medium-sized, diced red chilli – 1
– Scrubbed clams – 400g
– White wine – 160ml
– Cornflour combined with water to form a paste – 1 teaspoon
– Flat parsley, finely chopped -1 bundle
– Zest and juice squeezed from half of a lemon
– Sea salt for seasoning

Start by boiling a pot of salty water on high heat. Add the linguine and let it cook for eight minutes until it’s slightly soft, then drain it, capturing some of the pasta water for later use.

In a separate nonstick pan set over a medium flame, pour in the olive oil and add the slices of garlic. Let it cook until it turns a golden colour.

To this, add the diced chilli and the scrubbed clams, shaking the pan to mix. Pour in the white wine, turning up the heat and cooking for two more minutes. The clams will open as the wine reduces; discard any that remain closed.

Now, add the drained linguine into this pan, giving it a shake. Ladle in the saved pasta water and the cornflour mixture. Cook it on high heat until the mix forms a sauce that coats the pasta.

Finally, take the pan off the heat and stir in the chopped parsley, lemon zest and juice. Serve promptly in warmed serving dishes. Enjoy your meal!
